The name for the exclusive grade comes from Kobe, Japan where the cattle were originally raised. Our domestically raised tenderloins are fed with a special diet of soybeans, barley and beer.The cattle are then massaged with sake to push fat into the muscles, resulting in a soft, tender highly marbleized meat.
