Looking
to buy fresh seafood? If you don’t live near the coast, it may
be impossible. Most landlocked cities have fish markets, but the fare
may not be very fresh. If you don’t know what you’re getting
into, ask someone. Find out from management how often they receive
shipments and where they come from.
If you really want to buy fresh seafood, look for items that have
never been frozen. Depending on the creature and where it comes from,
this may not be feasible. For example, most crab legs, no matter where
they’re being shipped to, are frozen in brine then rinsed in
freshwater. They have to be frozen because they are cooked shortly
after being caught to preserve freshness.
If the local fish market can’t meet your freshness criteria,
check out a couple seafood restaurants. High-class dining establishments
should have better connections to fresh products than markets. For
example, in Salt Lake City, Utah there is a chain of restaurants that
flies fresh seafood in twice a day. Ask around, do some research and
you may find a place to buy fresh seafood, even in the middle of the
desert.
