which are fresh and which will taste best. Lobster is available from
warm and cold waters. This is the main differentiating feature among
lobster.
Warm water lobsters are often the most affordable option. The warm
water lobsters are not always the best option. Many chefs claim that
one in five warm water lobster tails are bad, in that they do not cook
up properly or they are spoiled upon arrival. Warm water lobsters are
from the Caribbean, Florida, Cuba, Nicaragua, and Latin America.
Cold water lobster generally has a firmer flesh and a more succulent
taste. This is often attributed to the fact that cold water lobster
grows slower than do warm water lobster. The lobster tails from cold
water lobster are more consistently delicious. Cold water lobster comes
from Maine, Australia, New Zealand and South Africa. Most connoisseurs
of lobster tails prefer the Maine variety and claim that Maine lobsters
are superior.
