People
don’t often think of Mexican seafood when contemplating this Latin
American cuisine. Rice, beans and burritos are the initial impression
of traditional Mexican fare. With six thousand miles of coastline, Mexico
does indeed have a great seafood tradition.
The type of Mexican seafood varies greatly by location and what is
available near different coastlines in Mexico. This country’s
coastlines – the Pacific to the west and the Gulf to the Atlantic
on the east are also reasons for the great variety of seafood in Mexico.
The differing bodies of water make great habitats for many types of
seafood.
One of the most popular Mexican seafood recipes is ceviche in which
the acidity for a lemon or lime actually cooks the fish. Other seafood
recipes common to Mexico include grilled seafood paired with an assortment
of fruits, vegetables, and sauces. Seafood is often used as protein
source for tacos, enchiladas, tostadas and fajitas to replace beef,
chicken, pork or legumes. Mexican seafood is a remarkable and delicious
aspect of Latin American cuisine.
