Classic
seafood linguine, also known as linguine pescatore features a tomato-based
sauce and several different types of seafood. Traditionally the dish
would include mussels, clams, shrimp, cod and calamari. More modern
versions often opt for crab or lobster with an Alfredo-based sauce.
Basically the dish may be comprised of anything, as long as it includes
seafood and linguine.
Another classic seafood linguine dish is called linguine alle vongole.
Alle vongole literally means “with clams” in Italian. The
dish typically features a white or butter sauce over noodles, topped
with clams and cheese. In this case the clams are usually removed from
their shells, as opposed to linguine pescatore in which they are usually
whole.
The noodles used in seafood linguine are flat like fettuccini noodles
but not as wide. Linguine means “small tongues in Italian, think
about that they next time you dig in. Linguine pasta comes from Campania,
a region in southern Italy. Calamarata, another type of noodle from
Campania is also popular in seafood dishes.
