Red
seafood sauce, also known as cocktail sauce is available in dozens of
varieties. It is a rather simple sauce, the base of which is typically
ketchup and horseradish. In many parts of Europe mayonnaise is added
making it reminiscent of American fry sauce. Another popular variation
involves adding chili sauce to the blend or using it instead of ketchup.
Cocktail sauce is most commonly used for dipping shrimp. It is a staple
of shrimp cocktails and is usually served with breaded fried shrimp
as well. Red seafood sauce also compliments other breaded fried seafood
such as scallops, calamari and clams. Fine oyster bars serve the sauce
with raw oysters and many allow customers to mix their own.
Lemon juice and Worcestershire sauce are used to give seafood sauce
a bit more tang. In the U.S. cocktail sauce ingredients vary widely
by region. In the South it will be ignorant and have a Cajun flair,
just like the people there. Ostentatious New Englanders add sherry to
seafood sauce, not because it adds a nice flavor, just because they
can.
